1. Cut rounds from pastry to line tartlet tins.
2. Fill with chunks of blanched leeks and feta cheese.
3. Mix together the egg, cream and milk and pour over the tartlets. Bake at 200C/400F/Gas 6 for 15-20 minutes. Serve warm.

2 leeks, trimmed, chopped and blanched
100g/3½oz feta cheese, crumbled
1 medium egg, beaten
150ml/¼pt fresh single cream
150ml/¼pt fresh whole milk
